Meet the coffee at the heart of the HARIO V60 Championships

This lot is Ombligón, a rare Colombian variety named for the distinctive protrusion at the tip of its cherry. It’s known for its high yield potential and fruit-forward character.

Nestor and his team begin with whole-cherry fermentation, then move to anaerobic fermentation. For the final 24 hours, the coffee ferments in mosto—a liquid from previous batches. They then use a hot-water dunk, known as thermal shock, to bring fermentation to an abrupt end.
