A rich and layered lot from Karnataka.

This season, the Gungegiri estate has elevated its processing by anaerobically co-fermenting coffee cherries with local wildflowers in sealed tanks for 24 hours before drying them as a natural process. This experimental technique yields a highly complex, layered cup profile packed with vibrant red and juicy fruit notes.



After sorting the ripe coffee cherries undergo a saline sanitisation before being transferred to a sealed stainless steel fermentation vessel. The cherries are then co-fermented with wildflowers under controlled anaerobic conditions for 24 hours, which introduces additional precursors for flavour complexity
