María Cardona Matías only started growing coffee in 2019. She now has 1.1 hectares of coffee planted and processes beautifully clean and crisp lots like this one.
Expect the classic Huehuetenango profile: super, super clean, light mouthfeel and a crisp and refreshing acidity.

This lot in particular comes from the family’s latest land purchase: Sakchibal.
For the harvest, the family moves the depulper to the plot they have located above Petatan. They start processing around 2pm, hand sorting out defects, with the coffee resting in a large container to ferment. Fermentation lasts 24-36 hours and then the coffee is washed. It then sits for a second night in clean water to finish removing any trace of mucilage.
The coffee is dried on a patio and monitored and turned constantly by Maria’s husband. It stays in the sun from 7am until 4pm for about four days until it’s fully dry.
